Festive Style Turkey and Tomato Risotto Recipe

Easy To Make Festive Style Turkey and Tomato Risotto

This risotto recipe is so quick and easy and all of your Christmas leftovers can be thrown in! The meal features turkey and bacon but you can swap the meat and vegetable ingredients for whatever you like. Why not try adding some leftover Brussels sprouts and roasted carrots? It is also cooked in the oven meaning you can leave it and carry on with your evening for a while, whether that is to relax or carry on with your busy festive activities. Serves three and takes approx 45 mins to cook.

Risotto Recipe Ingredients:

  • 250g Risotto Rice
  • 100g Leftover cooked turkey
  • 50g Leftover cooked bacon
  • 100g Mushrooms
  • Half a White Onion Diced
  • 2 Tbsp Tomato Puree
  • 2x Garlic Cloves
  • 2x Vegetable Stock Cubes
  • 1200ml boiling water
  • Salt and Pepper
  • 1 tsp Paprika
  • 1tsp Mild Chilli Powder
  • 50g Grated Parmesan

Step by Step Instructions:

Step 1) Preheat the oven to Gas Mark 6/200. Heat some oil in a pan on medium heat. Then you can add your diced onion and fry for 2-3 minutes. Add your mushrooms, leftover turkey and leftover bacon along with some salt and pepper. Cook for 5 mins, until the mushrooms have softened and the meat has warmed through. 

Step 2) Pour the risotto rice into the pan and let fry for 1 minute. Then add the tomato puree and crushed garlic cloves. Stir until the rice is fully coated and let this cook for 2 minutes. At this time, get your 1200ml of boiling water, add your stock cubes and mix together until dissolved. Pour the stock over the rice into the pan. Whilst stirring, add in your paprika and mild chilli powder. 

Step 3) Transfer the full contents from the pan into an ovenproof dish. Make sure the dish has a lid. Put this in the oven for 35 minutes. 

Step 4) Take the dish out of the oven, be careful of the steam when taking off the lid. Stir the risotto, this should now be thick and not watery. If the rice still contains a lot of water, put it back in the oven for 5 -10 minutes. Add in the 50g of grated parmesan cheese and stir through thoroughly. Plate up the risotto, add a little more parmesan cheese for garnish and serve!
